Sweet potato slice recipe
Even if you don’t like sweet potato, you will love this slice. I’ll use my son as an example… he’s not a fan of the orange potato, BUT, he will inhale a slab of this!
Compared to the white potato, sweet potato is full of Vitamin A. It is so jam packed full of vitamin A, that one medium sweet potato gives you over 400% of your daily requirement of Vitamin A.
Vitamin A is known for beautiful skin. It makes our skin strong, clear and elastic. We also need this vitamin for our eyes, bones, immune system and to help reduce inflammation in the body.
What I love most about this slice is that it is packed with protein.
If a child is a fussy eater, they are probably not getting enough protein. They tend to love the refined carbohydrates and eat a lot of bread, biscuits, crackers, pasta, etc. I get it- you don’t want them to starve so we think that they are at least eating something! The problem is, by missing out on that protein they can’t stabilise their blood sugar (hello hyperactivity and poor concentration). We also need protein to be able to make neurotransmitters & hormones. Protein is also essential for growth and development.
Now, lets look at the adults. We can be exactly the same sometimes! As a general rule, I tell my clients to have protein at every meal. Breakfast, lunch and dinner.
The general rule with protein is you need to be consuming 1gm of protein per kilo of body weight.
To give you an example… 1 boiled egg has approximately 10gms of protein in it. Which brings me to my next point of discussion…
Eggs. Man, I love eggs. In my clinic I see a lot of ASD kids and people with mental health issues, mainly anxiety. I ask them if they like eggs (most of them do) and then tell them that eggs are their new breakfast.
Eggs contain choline and choline is needed to be able to create the neurotransmitter Acetylcholine which we know tends to be low in those with Autism Spectrum Disorder and Anxiety. If we are low in Acetylcholine we will see short term memory problems, cognitive decline, constipation and digestive dysfunction, poor sleep initiation and maintenance, muscle tension and anxiety. It is also implicated in Alzheimer’s disease.
So we like eggs because they contain protein and choline- essential ingredients for our health and well-being.
SWEET POTATO SLICE
– 10 eggs beaten
– 1/4 teaspoon salt
– 4 table spoons of plain flour (I use plain gluten-free flour. You can use tapioca flour as well)
– 1 large sweet potato peeled and grated- approx 600gm
– 200gm of short cut bacon, diced
– 1 large handful of fresh parsley leaves, chopped
– 100gm grated cheddar cheese
Preheat oven to 180 degrees celsius. Fry the bacon in a frypan till slightly browned then put aside to cool.
Add the flour and salt to the eggs and whisk through till combined and smooth. Add the sweet potato, parsley, cheese and bacon and mix through till evenly combined.
Pour into a baking dish (approx 20cm by 20cm) that has been lined with baking paper and smooth out so it is even. Place in the oven and bake for approx 40 minutes, or until a knife comes out clean. Place on a cooling rack to cool, then slice into serving sizes.
